Cripsy Hok Kien Mee Rad-Nah Goong Mixed vegetables หมี่ฮกเกี้ยนกรอบราดหน้ากุ้งผักรวม


Rad Na is a type of noodle. It is made by first frying the noodles with a little oil and sweet dark soy sauce and then setting them aside. The broth used is usually pork or chicken bone broth. Mixed with tapioca starch, it is thick and sticky. Popular types of meat are pork, shrimp, seafood, chicken or beef. Most people like pork. If using pork, it will be marinated with eggs, coriander roots, garlic and pepper first to make the pork soft and chewy. The most commonly used vegetable is kale, or you can use other vegetables such as bok choy or Chinese cabbage. But today I used whatever mixed vegetables we had on hand.

There are many types of noodles used to make this dish. Usually we like to use large noodles or white rice noodles. It will be stir-fried with oil and dark soy sauce first. There are also egg noodles and yellow noodles, which are usually crispy fried noodles. Eggs are sometimes added to the toppings. Or you can mix it into the gravy as well.

Ingredient

100 grams Hokkien noodles
5 grams minced garlic
20 grams kale
20 grams broccoli
20 grams cauliflower
15 grams baby corn tops
15 grams carrots
120 grams peeled shrimp
1 tablespoon tapioca starch dissolved in water
5 grams ground white pepper or ground black pepper
Chicken or vegetable broth of choice
Soy sauce as desired
Seasoning powder as desired
Sugar as desired
1 teaspoon dark soy sauce
1 tablespoon soybean paste
Salt as desired

How to cooking
  1. Set a pan over medium heat followed by a little bit of vegetable oil for frying the noodles. Wait for the oil to heat up. Put the yellow noodles in a round strainer. Or a small colander and fry in a pan until golden and crispy on both sides. and put it aside.
  2. Set the pan over medium heat. Follow with chicken broth or vegetable broth as desired. Add minced garlic.
  3. When the soup boils, add all the vegetables, followed by shrimp, add seasoning powder, sugar, soybean paste, light soy sauce, and a little dark soy sauce. A little salt, taste to taste.
  4. When the soup with vegetables comes back to a boil again. Take the tapioca starch dissolved in water and add it around the pan while stirring it around. So that the flour spreads evenly. Does not clump together When the water boils again, the dough will become puffy and cooked.
  5. Ladle the gravy into a serving bowl. And put crispy Hokkien noodles on top.

Tip
  • Putting the outline on top If serving customers is a little late The noodles will still be crispy and delicious.
  • In the case of placing crispy noodles And pour the sauce over. If served slowly, it may make the noodles soft and sticky before reaching the customer's hand.
