Crispy Red Tilapia fry with garlic pepper (Pla Tab-Tim Thod Ka-tiem prik Thai) ปลาทอดกระเทียม


This crispy and aromatic fish recipe is great for those who enjoy and love the taste of fish. And it has turned out to be one of my favorite recipes. This recipe can be prepared as an appetizer, or a whole meal if desired…well have a lot of order for our restaurant (hotel restaurant) if you interesting water fish is cheaper than other sea fishes. What I post today is water fish called “ Red Tilapia" in Thai called "Pla Tab-Tim"  If you are in Thailand or in any Thai Restaurant you can find this menu by calling "Pla Thod Ka-tiem" for shot word. Ingredients:
  • 700-800 grs. Red Tilapia Whole fish 
  • 1 tbsp minced coriander root
  • ½ cup garlic, crushed 
  • 2 ½ tsp fish sauce
  • ½ tbsp black pepper 
  • 1 tsp seasoning or Aromat
  • 2 tbsp Oyster sauce
  • 1 cup vegetable oil for frying
  • 3 tbsp soup
  • Coriander leaves (option)
Prepartions:
  1. Have the fish well scalded, washed and drained, cut slits in the sides of each.
  2. Slash the fish on both sides. Three times on each side.
  3. season them with salt and pepper, and roll them in corn flour.
  4. Then leave to marinate for 5 minutes.
  5. Heat oil in a frying-pan over medium heat.
  6. Add fish and their marinade into frying-pan, then fry until the color turns to golden brown and transfer to a serving dish.
  7. Heat oil in the other pan under medium heat.
  8. Add garlic, coriander root, fish sauce, oyster sauce, black pepper and seasoning 
  9. Add soup and continue fries until mix well with liquid soup and garlic golden brown and crispy and turn off the stove. 
  10. Spoon crispy garlic and liquid soup on top of fry crispy fish.
  11. Sprinkle with fresh coriander leaves 
  12. Serve immediately with hot steamed rice or you can eat as an Appetizer.
Note: 
- you can use any sea bass the same size. Because this size enough for 2-4 peoples.
- you can use white pepper instead of black pepper. I use black pepper because of love the smell.
- Steps 8-9 should not be longer than 2-3 minutes. Because garlic will over golden brown. ;P
