Thai Fried Rice with Crab (Khao Phad Poo)


Fried Rice with Crab Thai called "Khao Pad Poo" A popular Thai dish fried rice with crab can be found on many a Thai restaurant's menu. Thai fried rice goes particularly well with seafood. In this recipe, it's cooked with freshly steamed succulent crab meat. The trick to successful fried rice is to use steamed rice that's been cooled in the refrigerator for at least four hours or even overnight. This helps to harden the rice which allows it to keep from breaking when fried. For best-tasting results try to use fresh crab meat or shrimps also work well.

Ingradient:
  • 100 g (13 oz) Crab meat peeled
  • 2 tb soy sauce
  • pepper
  • 1 onion
  • 1 tomato
  • 2 spring onions
  • 1 cup of streamed rice
  • 2 tb oil
  • 2 tb fish sauce
  • 2 tb soy sauce

Preparation:
  • In a pot bring water to boil and add rice.
  • Cook for ten minutes and pour off water. Let rice cool down.
  • Marinade prawns with soy sauce and pepper.
  • Dice onions and tomatoes, cut spring onions into 2 cm long pieces.
  • Heat oil in a wok or a pan and add prawns. Stir-fry prawns until they turn red.
  • Add onions and continue to stir-fry.
  • Add tomatoes and spring onions and stir-fry for one more minute.
  • Stir in rice and heat.
  • Season with fish sauce, soy sauce and sugar.
  • Serve with: Chilli Fish Sauce (Num Pla Prik)
