Glass Noodles Pad Thai Koong Sod


Thai style fried noodle is very well known and is one of the dishes that foreigners love to eat. And this another version of Pad thai and It combines with many ingredients such as bean sprouts, green onion, chillies, lemons, etc. I show up this receipe by using glass noodles instead of rice noodles as I already posted Pad Thai recipe in 2008 and Pad Thai vegetarian version in 2009. INGREDIENTS:
  • 12 fresh Shrimp
  • 90 g glass Noodle (3 - 5 mm)
  • 50 g Fresh Bean Sprouts
  • 2 tbsp Chopped (1") Green Onion
  • 6 tbsp Fish Sauce
  • 6 tbsp Oyster Sauce
  • 3 tsp Vinegar
  • 2 tbsp Sugar
  • 2 tbsp Preserved Turnip
  • 2 tbsp Crushed Peanuts
  • 1 tbsp Paprika
  • 2 Eggs
  • 1 tsp Red Chili (for Spicy lover)
  • ½  Lemon
PREPARATIONS:
  • Soak the glass noodles about 10 minutes in room temperature water.
  • Heat and season the wok. Add the Shrimp and grill for 90 seconds. 
  • Add the Eggs. When the eggs are not quite finished, add the glass noodles, Sugar, Peanuts, Turnips and Paprika. 
  • Stir Fry until all ingredients are mixed well and the noodles are wilted.
  • Season with the Fish Sauce, Oyster Sauce and vinegar. 
  • Then add Bean Sprouts, Green Onions and Red Chili. Stir fry quickly ensuring everything is well combined. 
  • If you like wet noodle dishes de glaze with 5 oz. water stock. 
  • If you like firmer dry noddles de glaze with only 2 oz. water stock. 
  • Place on Serving plate and garnish with more Bean Sprouts and a Lemon wedge.
