Fried river prawns with tamarind sauce legendary menu. The river prawns were just right. Makes the shrimp meat sweet. Fry in oil quickly. INGREDIENTS:
- 250 garm River prawn cleaned
- 1 tbsp Palm sugar
- 1 1/2 tbsp Fish sauce
- 1/2 tsp Salt
- 1 tbsp Chopped coriander root
- 15 garm Chopped coriander greens
- 30 garm Tamarind juice
- 2-3 fried dried small chillies
- 1 tbsp Vegetable oil
- 1 tbsp Finely chopped garlic
- 2 tbsp Water
- Put the oil in a wok over medium heat.
- Fry the garlic, shallots, and coriander root. Until browned, remove from the wok and set aside.
- Return the wok to the heat. Add palm sugar, tamarind juice, salt, fish sauce and water.
- When the mixture comes to a boil, and slightly sticky appearance remove from the heat.
- Bring river prawn fry in oil quickly to stir up the shrimp to make it a beautiful appetizing color.
- Place river prawn on the serving plate pour tamarind sauce over fried river prawn..
- Sprinkle them with the fried garlic and shallots.
- Just before serving, sprinkle with chopped coriander.
